Chocolate Chip Pistachio Cookies

Ingredients 

3 ¼ cup of sifted all purpose flour

2 teaspoons of baking powder

1 teaspoon of salt 

1 cup of butter (or margarine), softened 

1 cup of granulated sugar 

2 eggs

2 tablespoons of milk

1 teaspoon of vanilla extract

¼ cup of chopped walnuts 

1 package of pistachio flavor pudding (jello pack)

1 package (6 oz) of semisweet chocolate chip cookies 

Directions 

  1. Preheat the oven to 375° F and lightly grease a cookie sheet. 
  2. Sift flour, add baking powder and salt. 
  3. Beat the softened butter, add sugar, and mix until well blended. Add eggs, milk, and vanilla to the mixture. Blend until the ingredients create a creamy consistency. 
  4. Add Flour mixture and mix until a stiff dough forms. Remove ¼ of the dough to a small bowl and add walnuts, the pistachio pudding, and chocolate chips. After the new ingredients are mixed, add green food coloring if desired. 
  5. Shape the pistachio part of the cookie into a ball and flatten it on the cookie sheet. Shape the dough with the walnuts into the size of a marble and place it on the top of the flattened pistachio cookie. Top the two cookie layers with a single chocolate chip for decoration. 
  6. Bake in the oven for 8 to 10 minutes and allow to cool. Enjoy!

 

Mint Chocolate Chip Cheesecake Dessert Dip

Ingredients 

300 grams cream cheese, softened to room temperature approximately 11 oz

1/2 cup powdered sugar

2/3 cup plain Greek yogurt

1/4 – 1/2 teaspoon mint extract to taste

green food coloring if desired

2/3 cup mini chocolate chips

Directions 

  1. Add the cream cheese to a medium bowl and beat using a hand mixer until it’s creamy and smooth.
  2. Add the powdered sugar and continue to beat on high speed until it’s fully incorporated.
  3. Add the Greek yogurt and mint extract and continue to beat on high speed until well incorporated (scrape down the sides of the bowl to ensure everything is evenly mixed).
  4. Beat in the green food colouring until it’s fully incorporated and no more white streaks remain (skip this step if you desire).
  5. Stir in the chocolate chips by hand and save a few for sprinkling over the top of the dip when serving.
  6. Serve this dip immediately, or refrigerate it for up to 2 days before serving with fresh fruit, your favourite cookies, or even pretzels. Enjoy!

 

Classic Shamrock Shake

Ingredients 

1 ½ cups vanilla ice cream

½ cup mint leaf stems removed, loosely packed

½ tsp pure mint extract

whipped cream

chocolate syrup

Directions 

  1. Place ice cream, mint leaves, and mint extract into a high-speed blender.
  2. Blend until smooth.
  3. Pour into a glass and garnish with any of the following: whipped cream, shaved chocolate, chocolate syrup, strawberries. Enjoy!

 *Notes*

  1. For a thinner shake, add some milk. Start with ¼ cup.
  2. For a more subtle mint flavor, leave the extract out completely!
