Self-quarantine can make it hard to stay healthy, but staying healthy is not necessary all the time. Indulge in these snacks for a nice cheat day or even if you are just feeling up for a treat.


Chocolate Chip Banana Bread

Makes 6 servings

Ingredients

3 ripe bananas

1/3 cup butter (melted)

1/2 cup sugar

1 egg (beaten)

1 tsp vanilla extract

1 tsp baking soda

1 1/2 cups all-purpose flour

1/2 cup mini chocolate chips

pinch of salt

Directions

1. Preheat oven to 350° F

2. Add the bananas and mash until smooth. Add in melted butter and mix until combined properly.

3. Add in the sugar, egg, vanilla, baking soda, salt, and flour. Mix all together until the batter is smooth.

4. Mix in the chocolate chips and pour the batter into a greased loaf pan. (You can add chocolate chips on top if you would like.)

5. Bake for 50-60 minutes (or until toothpick comes out clean)

6. Cool completely before serving

Tip: add Nutella on top for an extra chocolatey treat!

Muddy Buddies

Makes 16 servings

Ingredients

1 box Rice Chex Cereal

1 bag semi-sweet chocolate chips

3/4 cup peanut butter

1/2 cup (1 stick) unsalted butter

1 tsp vanilla extract

1 bag (2 lb) bag powdered sugar (can use less)

Direction

1. Pour entire bag of Rice Chex into large bowl. Set aside for the time being.

2. Mix chocolate chips, peanut butter, and butter in large microwave safe bowl.

3. Microwave for 1 minute and stir until fully combined and smooth. If not melted enough, microwave in 30 second intervals (stirring in between) until fully melted.

4. Add in vanilla extract.

5. Combine chocolate mixture and cereal gently mixing with spatula until completely coated in chocolate. (do not over mix, you want some chocolate chunks)

6. Use as much (or as little) powdered sugar as you like

Tip: store in airtight container for lasting freshness

Quick Quesadillas 

Makes 6 servings

Ingredients

6 flour tortillas (8 in.) warmed

1 1/2 cups of shredded Monterey Jack Cheese

2 medium sliced green onions

3/4 cup salsa

2 tbsp canola oil

optional: sour cream for dipping

Directions

1. Place 1/4 cup of cheese, 2 tbsps green onions, 1 tbsp of salsa on top half of each tortilla. Brush the edges with water and fold over the filling and press to seal.

2. Heat oil in 12 in. skillet over medium heat. Cook until lightly browned on both sides.

3. Serve with sour cream and remaining salsa.

Tip: Switch out cheese for your favorite kind
